Hawaiian Holiday Macadamia Cream Pie

9-inch macadamia nut pie shell
3 cups milk
1 cup granulated sugar
6 tablespoons flour
2 tablespoons cornstarch
1/2 teaspoon salt
3 egg yolks, well beaten
3 tablespoons butter, softened
2 teaspoons vanilla
1/2 cup chopped macadamia nuts
1 cup whipping cream
2 teaspoons granulated sugar
1/2 cup macadamia nuts, finely ground

In a saucepan, heat milk to scalding.  Meanwhile in a separate, medium sized heavy saucepan, combine sugar, flour, cornstarch, and salt.  Set aside.  Very gradually, in a slow, steady stream, beat scalded milk into beaten egg yolks.  Again very slowly, blend the egg milk mixture into the dry ingredients (a wire whisk is best for this).  Over medium heat, stirring constantly, bring mixture to a boil (it should have thickened).  Remove from heat and blend in the butter, vanilla, and chopped macadamias.  Cool the filling and pour into the prepared pie shell.  Cover loosely with plastic wrap to prevent film, and chill.  Just before serving, whip cream with sugar until peak forms then decorate top of pie.  Sprinkle with finely ground macadamia nuts.
